Introducing the white series: a place for coffees that don’t quite fit into our regular line-up but are not wild or weird enough for the black series either. The white series will be a home for unique, high end coffees processed in a more traditional style. These will all be exceptional coffees that we fell in love with, but might just be too expensive for your daily cup.

t’s been a while since we released our last white series but we just wanted to wait for the right coffee to come along. So here it is, a beautiful washed geisha from Buenos Aires in Colombia; bright, tropical, sweet, juicy and floral.

Israel Hernández comes from a traditional coffee-growing family. The farm primarily produces geisha, with the variety occupying most of the land. Israel’s dedication and passion is evident in every stage of production process. This coffee showcases the meticulous care and attention to detail that define his journey in the world of specialty coffee.

The ripe cherries are carefully harvested and taken to the processing plant. First, the low-density beans are removed in the floating process. The coffee is then left to oxidize for 24 hours at room temperature, allowing microorganisms and bacteria to begin their work. It is then pulped and fermented with the mucilage for 45 hours, where the work done by the microorganisms is further enhanced, highlighting the variety's characteristic profile. The coffee is dried in Marquesinas. This process can take up to 15 days, depending on weather conditions. When the coffee reaches a moisture level of 10-11%, it is packed in transparent bags and sisal bags and stored for one month in a cool, ventilated place. After this period, the coffee is ready for milling and export.
