Introducing the black series, a place for coffees that don’t quite fit into our normal line-up. Whether they are a bit too wild, a bit too floral or just a bit too expensive, these will always be outstanding process forward coffees.
Our new black series is a wush wush, from the esteemed Los Nogales farm. The Los Nogales farm is the result of coffee know-how passed down from generation to generation. Located in the Huila region, the coffee plantations benefit from an exceptional geography with mountains and fertile soils.
In 2005, after their 1st place in the "Cup of Excellence" competition in Colombia, the Hernandez family became known as a pioneer in specialty coffee.
Oscar Hernández is currently the leader of the family farm. Under his leadership and with his background as an industrial engineer, the farm became a research and innovation centre where technology is used to improve coffee production systems.
A company with a desire to not only create high quality coffee but also technology that allows them to continue revolutionizing the world of coffee while protecting the environment.
This wush wush variety has undergone a complex process where all microorganism and bacteria are removed from the coffee by cleaning and disinfecting the cherry. The chosen cherries then undergo a thermal shock by being immersed at 80°C for 20 seconds, then in cold water for 3 to 4 minutes.
The cherries are pulped and fermented with mucilage for 120 hours with preferments before being dried on raised beds.
This innovative work results in an incredibly aromatic and surprising coffee that reminds us so strongly of lemon candy we got goosebumps tasting it for the first time.
