Introducing the black series, a place for coffees that don’t quite fit into our normal line-up. Whether they are a bit too wild, a bit too floral or just a bit too expensive, these will always be outstanding coffees.
Our fourth black series is an another geisha, this time from the esteemed Los Nogales farm in Pitalito, Huila. This high intervention washed is bursting with flavor while still being clean and balanced. The advanced fermentation adds a lot of layers to the already complex flavor profile of this geisha.
Oscar Hernández, an industrial engineer, is currently the leader of the family farm. Under his leadership, Los Nogales became a research and innovation centre where technology is used to improve coffee production systems, pulping, drying, etc. A company that aims to not only create quality coffee but also technology that allows them to continue revolutionising the world of coffee.
This lot has undergone a complex process where first, after picking only the ripest cherries, all microorganism and bacteria are removed from the coffee by cleaning and disinfection the cherry. the coffee is pulped and after another pasteurization by means of thermic shock, preferments and additional sugar obtained from the coffee pulp are added to the fermentation tank. The coffee ferments in the tank for 120 hours before being dried on raised beds.
