It's the second year we buy a regional lot from the Gedeb zone in Yirgacheffe and it's the second time that it really impresses us with the consistency and quality. This year we chose a natural lot that stood out for its incredibly syrupy body. This regional lot was exported by Epthah Specialty Coffee, who is dedicated to building sustainable and collaborative supply chains that benefit customers, farmers, and their communities. The company emphasizes promoting the role of women in the coffee industry, recognizing their pivotal role in driving social and economic change in Ethiopia. Ephtah ensures quality at every stage of the shipment process, focusing on providing the highest quality green coffee beans and maintaining satisfaction among all stakeholders in the supply chain.
The level of labor and love from smallholder farming families and washing stations results in a truly exquisite cup profile that’s sweet with crisp acidity and a clean finish. Florals, citrus and sweetness all come together in a super balanced coffee.
We've made the transition to step away from the difference between espresso and filter roast, from now on all coffees will have one optimized roast profile to bring out the best each coffee has to offer. We have noticed that our filter and espresso profiles have been slowly moving towards each other and that our preferred profiles for both filter and espresso brew methods have been almost the same lately. Not much will change except that there is just one roast per coffee now, similar to our past filter roasts and a touch lighter than our past espresso roasts. This small change will give you cleaner, more balanced espresso’s with high clarity and tons of flavor. Please let us know if you have any questions about this transition.
