Geisha Pinton

Introducing the black series, a place for coffees that don’t quite fit into our normal line-up. Whether they are a bit too wild, a bit too floral or just a bit too expensive, these will always be outstanding process forward coffees.

This geisha lot from his farm Bella Vista is made up of 30% "pinton" (unripe cherries) and 70% fully mature cherries. Jhonatan Gasca actually created this profile by accident during a harvest when he had to pick everything at once to avoid losing the lot to heavy rains (Geisha cherries fall off the branches very easily in the rain). So he decided to harvest the entire lot in one go and ended up liking the result so much that he kept the profile. You still get the signature Geisha aromatics with a lot of florality and sweetness, but the pinton adds a really distinctive kick to the cup, with clear notes of rosemary and lavender. The extended fermentations, followed by a thermal shock, supports these floral and herbal notes with a high sweetness reminiscent of watermelon sweets.
