Osito works in India with a collective of producers KaadKaapi, dedicated to supporting wildlife conservation through the production of specialty coffee. These producers aim to farm coffee in a manner that does not disturb the movement or existence of native animal species. 

This commitment to conservation comes with its challenges. Managing a farm where elephants, tigers, Indian Bison and a rich variety of birdlife roam freely requires significant investments in maintaining dense canopy cover. This dense cover leads to reduced coffee yields and the presence of large animals can also cause damage to coffee plants. To offset these expenses, the collective focuses on producing specialty coffee, which commands higher prices in the market. The premiums earned from specialty coffee sales help cover the additional costs associated with wildlife-friendly farming practices. 

The Gundikhan Estate where this lot comes from, belongs to this KaadKaapi group. This farm equally emphasizes conservation and quality coffee production and this shows in the cup. Saif Ulla's farm is impressive. Located between 1,300 and 1,400 meters above sea level, which makes it some of the highest grown coffee we see in India. Gundikhan is hyper-focused on excellent processing, native tree diversity, and producing coffee in a manner that is friendly to the native wildlife.

We transitioned to one optimized roast profile to bring out the best each coffee has to offer. We have noticed that our filter and espresso profiles are slowly moving towards each other and that our preferred profiles for both filter and espresso brew methods are almost the same lately. Not much will change except that there is just one roast per coffee now, similar to our past filter roasts and a touch lighter than our past espresso roasts.
