This extremely well processed natural from Mi’eesa Robe blew us away on the cupping table as the best natural Ethiopian of the season. This lot is a beautiful expression of the highlands of East Guji. If you like a cup bursting with sweetness while being extremely juicy and beautifully floral, this one's for you.
We got this coffee through our partner Osito, who has been working with Sookoo since their very first harvest. The company is founded by Ture Waji and we were lucky to meet him over breakfast in Copenhagen. Ture is the founder of Sookoo coffee and he specializes only in natural processed coffees where he pays strict attention to detail in the drying stage. This results in super clean and sweet naturals, it’s not for nothing he got the nickname ‘the king of Guji’.
This specific single farmer lot is from Mi'eessa Robe’s farm. It spans over eight hectares that range in elevation from an incredible high 2,000 masl to a jaw dropping 2,350 masl. He inherited his farm from his parents and has been a coffee farmer his entire life. The warm days and cool nights at this altitude are perfect for growing sweet, dense cherries.
At his farm, Mi'eesa Robe starts by only picking the fully ripened cherries because these higher sugar contents give the coffee a more complex cup profile. Then Sookoo dries the cherries in a very shallow bed, while turning the coffee cherries at least 6 times per day. These specific protocols make their coffees particularly crisp and clean. Total drying times are around 21 – 28 days.
