Shoondhisa

Shoondhisa is our first natural Ethiopia of the year from the outstanding producer Ture Waji. Ture is known for some of the nation’s cleanest naturals we just love. 

Sookoo Coffee is a processing and exporting company led by Ture and built on a commitment to quality and community. They source their beans from surrounding Kebeles, each lot reflecting the unique terroir of its origin.

This particular lot comes from the Shoondhisa Kebele and features varietals Gibirinna 74110 and Serto 74112, selected for their resistance to coffee berry disease by the Jimma Agricultural Research Center in 1974.

The 35 producers who contribute to this lot manage small plots of land harvesting coffee from their organic gardens alongside subsistence crops. The average Ethiopian farm size is 2.5 hectares, which is larger than the average farm in Colombia. However, the planting density in Ethiopia is much lower, with most production occurring in fully or semi-forested systems. This results in fewer trees per hectare and lower yield per tree.

It has a super clean Guji taste profile: a citrussy, bergamot-like florality with lots of strawberries and a mouth-watering, jammy texture.
